- vegetable broth 2 cups
- shallots 2 small
- butternut squash 2 lbs
- red pepper flakes 0.12 tsp
- ginger
- salt
- pepper
- nutmeg
- garlic 2 cloves

- small pot
- skillet
- frying pan
- immersion blender

1Add the vegetable broth to a small pot and bring to a boil.

2Add the shallots and salt to the skillet and cook until translucent.

3Add the butternut squash to a frying pan and saute.

4Add the squash to the shallots and then add red pepper flakes and ginger and season with salt and pepper and nutmeg .

5Cook, stirring occasionally, about 8 to 10 minutes .

6Add the garlic until fragrant.

7Add the vegetable broth. Reduce the heat and simmer until the squash is soft and the liquid is reduced by half, about 15 to 20 minutes .

8Once the squash mixture is done cooking, blend using an immersion blender .

9Season to taste.
